The information is taken from the ISGEM database of Matis ltd., an Icelandic Food and Biotech R&D institute.
Note that in most cases, lamb liver has the highest numbers compared to the other ones. In general, organ meats are between 10-100 times higher in nutrients than corresponding muscle meats. Fruits, vegetables and herbs, on the other hand, are rich in phytonutrients like flavonoids and polyphenols, not found in high concentrations in muscle or organ meats.
